Avocado Toast with Garlic and Over Easy Egg

There’s so many reasons why avocado toast is so good. It tastes delicious. You can make it in so many different ways. It’s healthy. Full of good fats, whole grains and protein. It’s a great last minute breakfast, lunch or even dinner idea. It comes to the rescue when you have absolutely nothing to make. It also comes in handy when you’re feeling super lazy to cook. And both kids and adults like it. Need I say more? Avocado toast is amazing.

And it’s not just for hipsters. It’s for mommy and me, too.

Easy Avocado toast with Garlic

My favorite way to make it, is this way. Garlic rubbed on toast, with mashed avocado, topped with an over easy egg. Salt and pepper to taste. And HOT SAUCE.

Avocado Toast with Garlic and Over Easy Egg

Ingredients

  • Whole wheat bread
  • One clove of garlic
  • Avocado
  • Egg

Instructions

  1. Toast the bread in the toaster.
  2. Peel garlic, rub garlic on toast generously.
  3. Peel and mash avocado and spread on top of toast.
  4. Fry an egg just under medium heat until bottom gets crispy. Flip over for 30 seconds to a minute depending how runny you want the egg.
  5. Carefully place the egg on top of the avocado toast. Sprinkle with salt and pepper.
  6. Add hot sauce if desired.

DIY Kids Sushi Plate: Vegetarian

Sushi doesn’t have to be daunting. All you need is a little rice and seaweed, which we always have on hand. And veggies of your choice. It doesn’t have to be fancy either. Usually, I do like to make real sushi rolls, but sometimes this DIY kids sushi plate will suffice. Not to mention, it’s cute. Not only does cutting food into shapes make all the difference to a kid, it makes eating more fun. In essence, this dish is toddler-approved. Kid-approved. And grown-up approved. Yup, my husband eats this too.

As you can see, today, I went all vegetarian. I just chopped up some avocado, cucumber and seaweed. To make the panda rice, I used a rice mold which you can find here. I also chopped up some mango for dessert. The fruit and veggie cutters you can find here.

Finally, the rest was up to Els. For instance, today, she wrapped the rice and avocado into the seaweed and munched on the cucumbers on the side. Next, she took a bit of her mango before going back to eating her kids sushi all over again.

Occasionally, I add some egg, daikon radish and carrots in there too. Again, whatever you have on hand works!

DIY sushi plate for kids: Vegetarian

Ingredients

  • Brown or White Sushi Rice
  • Avocado
  • Cucumber
  • Unsalted roasted Seaweed - for the eyes and mouth
  • Roasted, salted seaweed
  • Mango (optional)

Instructions

  1. Cook rice in a rice cooker until done.
  2. Scoop rice into panda rice mold and press down. Carefully press the sides of the mold to release the rice onto plate.
  3. For the eyes and mouth - use unsalted seaweed and press down into the panda mold punch.
  4. Place the seaweed pieces onto the rice. (The seaweed will stick to the rice on its own)
  5. Chop up Avocado and cucumber. Use fruit/veggie cutters into fun shapes.
  6. Cut roasted, salted seaweed into small rectangular or square shapes with scissors.
  7. Wrap rice with veggies in the seaweed and enjoy!

Mini Gingerbread Loaf with Real Ginger

Every year, I try to make something nice for my neighbors and friends. In the past, I’ve made DIY hot chocolate jars, Anthropologie-inspired mason jar snow globes, peppermint bark with peppermint Joe joe’s and organic peppermint coconut oil sugar scrub. This year, I decided to make these little babies. Mini gingerbread loaves with REAL ginger. I love how tiny they are. And how cute they look all wrapped up in a tiny little bow. The best thing about this mini gingerbread loaf though, is the taste. My husband gave it a 10 out of 10.

It’s the perfect texture of moist in the inside and crunchy on the outside. The perfect balance of not too sweet, but sweet enough. And the subtle tastes of sweet molasses and spicy ginger mixed together is — well…perfect.

I found these oven safe mini loaf pans at World Cost Plus, which were amazing because I could pour the batter right into them and bake them in the oven. Once done, they’re already packaged and ready to go.

If you grease the pan and dust it with a little flour, shaking off the excess, the loaf will slide right out once done. Easy.

 

All packaged and ready to go. I just used some cellophane and wrapped it up with a bow. Some I delivered just like this because it was literally next door. I love Christmas.

Mini Gingerbread Loaf with Real Ginger

Dessert

Yield: 3 mini loaves

Ingredients

  • 1 1/2 Cups of All Purpose Flour
  • 1 Cup of Whole Wheat Flour
  • 1 tsp of ground cinnamon
  • 1/4 tsp of salt
  • 2 tsp of baking soda
  • 3/4 cup of raw cane sugar
  • 1/4 cup of blackstrap molasses
  • 1/2 cup of organic cold pressed canola oil or coconut oil
  • 1/2 cup of unsweetened almond milk
  • 2 eggs
  • 1/2 cup of minced ginger
  • 1 cup of boiling water
  • Confectioners' sugar for dusting

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Put your oven rack in the lower third of the oven.
  3. In medium mixing bowl whisk together flours, sugar, cinnamon and salt.
  4. In another mixing bowl, whisk together the eggs, milk, oil and molasses.
  5. In a third small bowl, dissolve the baking soda with boiling water.
  6. Stir in the baking soda mixture and the wet mixture all into the dry mixture.
  7. Do not overmix.
  8. Fold in the minced ginger.
  9. Pour 3/4 full into greased, and flour dusted (shake off excess flour) mini pans.
  10. Bake for approximately 40 minutes, until a toothpick comes out clean.
