Quinoa Patties with Parmesan and Chives

If your kids don’t like quinoa, trust me, they’ll like these. Quinoa patties are the best thing of my 2018. Seriously! They are so so good. We can eat an entire batch in one sitting. Including my daughter, who claims that she absolutely ‘hates’ quinoa. Besides the quinoa pasta salad I made the other day, this is going up as one of our favorites.

The problem with quinoa, I think, is that it can be pretty flavorless. I don’t blame my daughter for not liking it. Even I have to muster up the mojo to eat quinoa sometimes. But these quinoa patties are different. They are so full of flavor. And deliciously crispy on the outside. You can’t just have one!

The garlic, chives and parmesan give it that extra flavor boost. My daughter likes them because she can eat them with her hands and dip it in ketchup, soy sauce or sour cream. (All three ways are good, by the way.) Healthy Quinoa Patties with Parmesan and Chives. Great way to get kids to eat quinoa!

I like them because it’s full of protein. Quinoa is already full of protein and the 4 eggs on top of that make it protein-packed. For more bite sized meal ideas, check out our heart shaped egg muffins! And pesto parmesan egg in baskets, too!

Quinoa Patties with Parmesan and Chives

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 20 small patties

Quinoa Patties with Parmesan and Chives

  • 2 1/2 cups of cooked organic quinoa
  • 1 white onion (finely chopped)
  • 3-5 cloves of garlic ( I like mine more garlicky)
  • 1/3 cup of chives (finely chopped)
  • 1/3 cup of parmesan cheese (freshly grated)
  • Salt and pepper to taste
  • 1 cup of whole wheat bread crumbs
  • 4 eggs (beaten)
  • 1 tbsp Olive oil
  • Sour cream, ketchup or soy sauce (optional for dipping)

  1. Cook 1 cup of dry quinoa in 2 cups of boiling water. Bring to a boil and then let simmer for 15 minutes with lid closed.
  2. Get the quinoa to room temperature.
  3. Prep your onion, garlic and chives by finely chopping them.
  4. Grate the cheese.
  5. If making your own bread crumbs - toast 3 pieces of whole wheat bread and chop in a food processor until ground into bread crumbs.
  6. Beat the eggs in a small bowl.
  7. In a large mixing bowl, add into the quinoa, all the ingredients. Start with the eggs, salt, pepper, onions, garlic, chives, cheese then bread crumbs.
  8. Heat a large pan just a tad below medium with olive oil. Take a heaping tablespoon of the batter and mold in your hand a small sized patty and place on pan. Do not overcrowd.
  9. Cook with the lid on for approx 7 minutes. Flip to the other side for another 7 minutes with the lid off.
  10. Serve right away, plain or with dipping of your choice.
  11. Also great for lunch the next day!

*This recipe was given to me by a friend of mine a LONG time ago. I wish I had made it sooner, but at least I made it, right?!
