Peppermint Bark with Trader Joe’s Candy Cane Joe-Joe’s
Last Christmas, for my neighbors and friends, I made Hot Chocolate Mason Jars. This year, I thought, why not peppermint bark?
It seems easy enough. And I know just the perfect thing to add to it.
Trader Joe’s Candy Cane Joe-Joe’s. Yep. They taste just how they look.
1 1/2 cups of dark chocolate chips
1 1/2 cups of white chocolate chips
5 chopped Trader Joe’s Candy Cane Joe-Joe’s ( I used a knife and chopped them into pieces.)
Crushed candy cane to sprinkle on top ( I placed a large candy cane in a ziplock bag and crushed with a hammer.)
I also needed one of these:
Christmas themed, silicone, peppermint bark pan. C’mon, I had to buy it.
I used Ghirardelli 60% dark chocolate. But milk or semi-sweet chocolate will work too.
Place a stainless steel bowl on top of a pot of simmering water. Pour in the dark chocolate chips and stir constantly until melted. Pour the dark chocolate evenly into the mold. Add a layer of the chopped cookies. Let it set for approx. 10 mins. Melt the white chocolate the same way as the dark. Pour white chocolate on top of the cookie/dark chocolate mixture. Sprinkle with crushed candy cane. Freeze for 30 minutes.
I kind of failed at spreading the white chocolate evenly. Probably because I’m a spaz and I panicked. Ha.
The back however, turned out really nice!
This pan is actually quite amazing. I just peeled off the pan and the chocolate came right off. And they broke apart into perfect rectangle bars.
They also tasted fantastic.
